In a small NYC kitchen, it's not easy to prepare a big Thanksgiving meal. And they sure don't breed turkeys for two - I simply cannot store all the leftovers in a small 22 inch fridge.
This year I elected to do a small chicken, but not in the oven. Bird, stuffing, gravy, and even a few dried cranberries !!!error: Indecipherable SUB-paragraph formatting!!! .
Because I can't not mess with a recipe, I've made some changes. I've doubled the amount of stuffing (and everything that goes into it) because I want the cooker to be 1/2 to 2/3 full - that's how they work best. I like one pot meals, but don't often make them. GF loves mashies, so I'll cook those up separately with some asparagus on the side.
So in 7 hours or so we'll know whether we're ordering Indian food instead of having chicken.

One pot meals are the best. There's nothing better than coming home from work and having dinner ready to go.

In 10-plus years of cooking for my girlfriend, I've wrecked one piece of meat (pork loin) and a sauce for a fish dish - fortunately the fish tasted good just poached in wine and broth (with a bit of lemon). There's an excellent Indian restaurant near us that delivers in under 40 minutes, so I always have backup. Or dim sum from Shun-Lee - also a winner (overpriced for sure, but worth it once in a while).

Forgot to say. Did another 30 minutes on high to make sure the interior temp was at least 160 degrees. The chicken was tender, the stuffing was excellent - even the cranberries didn't seem out of place. And cleanup was putting the crock liner and a few other pots in the dishwasher. Everyone should do Thanksgiving this way.
